Oven Fried Chicken
This simple oven fried chicken is coated with a seasoned flour mixture and baked with a little butter.
Cook Time: 45 minutes

    3 to 4 pounds chicken parts
    1/4 cup spelt flour
    1 teaspoon paprika
    1 teaspoon salt
    1/4 teaspoon pepper
    1/3 cup butter

Preheat oven to 425°.

Wash chicken and pat dry with paper towels. In a pie pan, combine flour, paprika, salt and pepper. Coat chicken with the flour mixture.

Put butter in a shallow baking pan; place in oven to melt. When butter is melted, arrange chicken in the baking pan in a single layer, skin side down. Bake for 30 minutes; turn and bake 15 minutes longer, or until chicken is tender and done. Serves 4.
