MELT IN YOUR MOUTH LEMON BARS ~ for Type Os
CRUST
2 c. spelt flour
1 c. butter softened (no substituting)
1/2 c. powdered sugar...cornstarch-free (click here for Type-O acceptable recipe)
FILLING
4 eggs (slightly beaten)
2 c. sugar
4 Tbsp. spelt flour
6 Tbsp. lemon juice (bottled works fine)
FROSTING
1/2 c. butter (softened)
1 c. powdered sugar...cornstarch-free (click here for Type-O acceptable recipe)
1 tsp. almond milk
2 Tbsp. cold water
Preheat oven to 350 degrees.
Mix crust ingredients with fork as you would for a pie crust. Pat into a 9X13 greased & floured pan. Bake for 15 minutes.
As crust is baking, mix filling.
After crust is baked, pour filling over crust & continue baking for 25 minutes. Cool bars completely.
Make frosting by beating butter, powdered sugar & milk for 6 to 8 minutes on high speed. Then add 2 tablespoons cold water one at a time. Beat until smooth; spread over the cooled bars.
