OH SO DARK CHOCOLATE CAKE ~ for Type Os



Serves: 16
Calories per serving of cake w/o topping: 441
Fat Count w/o topping= 11.5

     2 cups spelt flour
    1 cup cocoa
    2 cup granulated sugar
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    2 large eggs
    1 teaspoon pure vanilla extract
    1 cup sour cream
    1/2 cup oil
    1 teaspoon white vinegar (an avoid) or lemon juice
    1 cup hot water

Preheat oven to 350 degrees F. Grease & flour a 13x9 cake pan or two 8" round cake pans. Mix all dry ingredients together in a large bowl. Add the rest of the ingredient and mix until batter is smooth.

Pour batter into prepared pans and bake until a table knife, inserted into cake center, comes out clean, 35 to 40 minutes. Cool cake(s) in pans 20 minutes; release from pans and cool completely on wire racks.

When cake is cool frost with instant or cooked chocolate pudding & sprinkle small chunks of dark chocolate &/or toffee pieces all over the top.
